The much requested recipe from my readers, has finally been put into a blog post! ;0)

The great thing about this recipe is: you can use any gelatin flavor, and mix and match fruits! Though blueberry is our favorite! {It taste more like blue “cotton candy.”} Strawberry is delicious but we prefer the blueberry the best! I sure hope you enjoy the recipe as much as we do. :0)

Serves: 6

Ingredients

  • 1 (3 ounce) package blueberry gelatin
  • 1 (8 ounce) can crushed pineapple in juice
  • 1 (15 ounce) can del monte mandarin oranges drained
  • 1 2 carton cottage cheese
  • 1 (9 ounce) container frozen whipped topping thawed

Directions

  1. 1 In a small saucepan combine gelatin and undrained crushed pineapple.
  2. 2 Bring to a boil; reduce heat and simmer 3 to 5 minutes or until gelatin is completely dissolved.
  3. 3 Remove from heat.
  4. 4 Gently stir in drained mandarin oranges.
  5. 5 Chill 30 minutes or until slightly thickened.
  6. 6 Fold cottage cheese and whipped topping.
  7. 7 Transfer mixture to medium bowl; cover and chill 2 to 3 hours or until set.
